I love my mom’s kimchi, but I can’t make it every month. When I moved to Washington, I tried every store-bought kimchi I could find online. Some were amazing — some tasted like sour water with cabbage.

For this test I ordered the 5 best-selling kimchi on Amazon (all “sliced napa cabbage kimchi,” 14–32 oz, $10–$18) and scored them on crunch, sourness, spice, and “would my family finish the jar?” All photos are my fridge, same plate, same lighting.

How to store: Keep at 34–38°F (1–3°C). Don’t freeze. Press down so brine covers the cabbage. It sours slowly — perfect for jjigae after 2 weeks. If it’s too sour, rinse quickly or add 1/2 tsp sugar when cooking.

  • “Sliced Napa Cabbage Kimchi” in English + 김치 in Korean — that’s the standard.
  • Ingredients: napa cabbage, radish, garlic, ginger, fish sauce or vegan — avoid “kimchi base” only.
  • Keep Refrigerated + cold pack — if it ships without cold pack in summer, skip.
